
This is a light pizza style dish that marries the flavors of smoky meat with spicy arugula and mellow manchego. Packs a lot of flavor without being too heavy.
1 9x12 in. flatbread, round or square
6 oz. thinly sliced prosciutto
2 cups packed arugula leaves
4 oz. manchego, shaved into very thin slices
olive oil
salt & pepper
Preheat oven to 350 degrees.
Place flatbread on aluminum foil or baking sheet. Coat flatbread lightly with olive oil. Evenly layer prosciutto over flatbread until completely covered. Bake in oven 10 minutes or until prosciutto starts to get crispy. Remove flatbread and bunch arugula on top. Top with slices of manchego cheese. Bake another 10 minutes or until manchego begins to melt. Serve with salt, pepper and olive oil.
