

The salty cured ham and ripe, juicy melon are a delightful pairing of flavors.
1 cantaloupe (about 3lb), seeded and cut in to 1 inch dice
8 oz. thinly sliced Serrano ham (1/16 inch thick), cut into ¾ inch strips – prosciutto can be substituted
1 bunch of fresh mint
1 box of toothpicks
Gently wrap each cube of melon with ham, making sure the ham wraps over the melon entirely. Add sprig of mint on top and secure with toothpick.
