

Tapenade is a typical Spanish dish made with black or green olives. Here we use green olives to stay true to Spanish tradition.
½ pound green olives, pitted and drained
3 anchovy filets
2 tbsp. drained capers
2 garlic cloves
¼ cup olive oil
salt & pepper to taste
Place all ingredients except olive oil into a food processor. Pulse until blended. Add olive oil slowly and continue to pulse until the mixture forms a creamy paste. Add a touch of salt & pepper to taste. Serve with toast or in a sandwich.
